Method
Step 1 – Prepping of sabudana/sagoo
In a bowl of water add sabudana/sagoo and let it soak in for 2 hours. Put the sabudana in a seive & let it rest in it for 20 mins, this will make sure that there is no water left.

To air fry – fry the tikkis at 200 degrees for 40 mins.
To bake – Pre heat the oven for 10 mins at 180 degree celsius then bake in the oven for 30 mins at 200 degree celsius.
To fry – Once the oil has heated, make sure to fry the tikkis on medium heat.
Enjoy in the evening with a nice cup of tea or beverage of your choice!
Notes :
- You can put the cutlets in the fridge for 15 mins if not in a hurry, this will make them crispier.
- Make sure the boiled potatoes are not hot when you use them for the recipe.
- If not fasting, you can also add 2 tbsp of rice flour in the cutlet mixture, this will give you more crunch.
- Make sure there is no water in the sabudana once you start with the mixture preparation else the cutlet might break while frying/baking.
